Caramel Corn Popcorn Balls Caramel Corn Popcorn balls are a chewy treat that will definitely satisfy any child’s sweet tooth! This nostalgic treat is easy to make and puts you in the mood for the fall season. Servings: 10-12 balls • ¼ cup of white corn kernels or 2 bags of microwave popcorn. • 2 T of avocado oil (omit if using microwave popcorn) • 15 large Marshmallows • ½ cup brown sugar (optional) • 1 tsp vanilla extract • 1 4oz white chocolate bar • 1 4oz semi-sweet chocolate bar • 7 drops of red and yellow food coloring each 1. If using microwave popcorn, pop the popcorn according to the instructions on the package. Skip to step 4.
2. If you are using stove top popcorn: In a large stainless steelbowl, add popcorn and avocado oil. Cover with aluminum foil. Poke a few holes in the foil to allow steam to escape. 3. Place over medium heat, moving continuously with tongs. 4. After the popcorn is popped. Remove from heat and let it cool. 5. In a large sauce pan over medium heat, add butter. 6. Once the butter is melted, add brown sugar and vanilla. Stir until combined. 7. Add the marshmallows stirring until melted. 8. Remove from heat and pour over popcorn. 9. With a rubber spatula, fold the caramel into the popcorn. 10. Once the mixture has cooled down slightly, with oiledhands, roll into small balls and place onto wax paper. 11. Melt each of the chocolate bars in separate bowls by placing in the microwave in 30 second increments. Stirring after each time. 12. Add the food coloring to the white chocolate 13. Place each of the melted chocolates in plastic baggy. Snip the end and drizzle over the popcorn balls. 14. Allow to cool and then place in cupcake liners. Variation: You can skip the chocolate all together and use M&Ms, Reese’s pieces or cookie crumbs to roll the popcorn balls in.
