Caramel Corn Popcorn balls are a chewy treat that will definitely satisfy any child’s sweet tooth! This nostalgic treat is easy to make and puts you in the mood for the fall season. My daughter loves graham crackers, so this dip is a great addition for any growing baby or toddler diet. The dip is not made to be super sweet as infants have strong palates.
Makes 2 cups • 1 15 oz. can pumpkin puree • ¼ cup organic 100% apple juice • ½ tsp cinnamon • 4 drops of stevia or teaspoon of pure maple syrup • 1 tsp vanilla extract • ½ tsp of ground ginger 1. In a large saucepan add all ingredients. Stir until combined. 2. Bring to a boil. Then cover and turn down to low. 3. Let it simmer for 30 minutes stirring occasionally. 4. Cool. Serve room temperature with graham crackers. Variation: You can also add this to oatmeal or serve on top of banana or apple slices. You can substitute the cinnamon and ginger for ½ tsp of pumpkin pie spice. When I first tried ground turkey, I thought it was the worst thing I ever tasted. Now, I can’t get enough of it. What I love about ground turkey is it is so versatile. It makes the perfect substitute for ground beef in any dish. Although there are lots of ingredients, this recipe has become a staple item on my monthly menu because it is so easy to make. I find that ground turkey needs to be seasoned heavily because it is bland which is why I created this spice blend. The spice blend can be made a couple of days before to save time. I triple the recipe and have the spice blend in a jar in my pantry. I am a firm believer in meal prepping earlier to guarantee you success during the week.

This one pot mac and cheese is perfect for those nights that you need to get dinner quick on the table. I know what you are thinking. There is no way this recipe can be good if you don’t bake the macaroni. That is not true. Although the texture is different, you will get creamy ooey gooey goodness that will have your lips smacking. Because it only takes one pot, clean-up is quick as well. In this recipe, you will cook your noodles in milk or vegetable broth instead of water. For additional flavor, you can do half of each milk and vegetable broth. This gives a creamy texture and allows you to skip the step of draining the noodles which saves you on time. This dish is also great with rotisserie chicken. If you do decide to add chicken, use a combination of chicken broth and milk. If you are one of those rebellious types, yes you can bake this recipe. Top with additional cheese or crumbled buttered crackers and place in the oven on 350 degrees for about 20 minutes.
